Lasagne

1 lb. box lasagne noodles
½ large yellow onion (chopped)
1 green pepper (diced)
1 pkg. long leaf spinach (thawed)
1 Jimmy Dean sausage (regular, red package)
1 lb. lean ground beef
2 large mushrooms (sliced)
¾ cup Greek olives (black)
4 (15 oz.) cans tomato sauce
large pkg. cottage cheese (large curd)
4 cups finely shredded mozzarella cheese
8 oz. parmesan cheese
3 cloves garlic
basil (shredded)

Brown the meat (Then drain and separate)
Put the meat back in the pan, and add the onion, green pepper, mushrooms, olives, tomato sauce, spinach, garlic and basil.
Boil the Lasagna Noodles (per the box instructions) then set them aside to cool, use a small amount of vegetable oil to coat the noodles to stop them from sticking to one another.
Lightly coat a roughly 13×9 x5 dish with vegetable oil and layer the ingredients in this fashion.

Do 3 layers of these ingredients, if you like, add parsley to the top layer for color.
Preheat oven to 350o. Cover Dish with foil and bake 1 hour, 15 minutes. Remove from oven, and let stand 15 minutes before serving. (You can optionally remove the foil for the last 10 minutes of baking for a crispier crust texture)
Open a bottle of wine and have dinner! Salud!
