Sbiten

Hot drink made from spices and herbs with honey or sugar. It was purchased in general only in Moscow in crowded places. Sbiten is considered Russian national winter beverage.

5 l water
800 g berry jam
200 g honey
2 g ginger
2 g cloves
1 g cinnamon

———

Bring water to boil, add honey and jam. 5 minutes after add spices to the water and cook for 5 minutes. Serve hot.

Cambric Tea

8 rounded tsp black tea
4 cups water
4 cups milk
brown sugar

——–

Warm milk. Boil water, add tea, let steep. Fill teacups or mugs ½ full with milk. Fill rest of the way with tea. Add brown sugar to taste.

 
 

Ginger Water

1 cup brown sugar
1 cup vinegar
1 tbsp ground ginger
1 gallon water

Dissolve sugar and ginger in vinegar by shaking or stirring, add cold water, mix, serve.

Note – if grinding your own ginger, consider straining it before putting it in a glass to get rid of the “bits”.

Serves about 8.
