Bacon Cheddar Sliders

Ground beef, lean, 16 oz
Bacon, 4 medium slices, cooked
Barbecue Sauce, .25 cup
Shredded Cheddar Cheese, 0.5 cup

Slider Buns (Approximately 16)

Cook bacon and then mince.
Add bacon, cheese, and barbeque sauce to ground beef and mix.
Scoop meat mixture with slider scoop. Place meat into slider pan and place lid on top.

Cook 2-4 minutes per side or until cooked through.

Drop on a bun and serve!

Bacon Wrapped Smokies

1 pound sliced bacon, cut into thirds
1 (14 ounce) package beef cocktail wieners
3/4 cup brown sugar, or to taste

1. Preheat the oven to 325 degrees F (165 degrees C).

2. Refrigerate 2/3 of the bacon until needed. It is easier to wrap the wieners with cold bacon. Wrap each cocktail wiener with a piece of bacon and secure with a toothpick. Place on a large baking sheet. Sprinkle brown sugar generously over all.

3. Bake for 40 minutes in the preheated oven, until the sugar is bubbly. To serve, place the wieners in a slow cooker and keep on the low setting.

Lettuce & Tomato Salad with Celery Seed Vinaigrette

Croutons
  • 1 tablespoon extra virgin olive oil
  • 1 crusty roll, torn into small pieces
  • Salt and freshly ground black pepper, to taste
Vinaigrette
  • 1 pinch celery seed
  • 1 pinch crushed red pepper flakes
  • Salt and freshly ground black pepper, to taste
  • 1/4 lemon, juiced
  • 1 tablespoon extra virgin olive oil
Salad
  • 1 1/2 cups arugula and frissee
  • 2 cherry tomatoes, halved

Directions

1. For croutons, heat the olive oil in a small skillet over medium low heat. Add bread, season with salt and pepper, and toss to coat with oil and seasoning. Sauté over medium-low heat, stirring frequently, until golden, about 5 minutes. Remove croutons to a plate.

2. Meanwhile, in a mortar and pestle combine celery seed, crushed red pepper, salt and fresh ground black pepper bruising lightly, and then add lemon juice and olive oil. Toss salad greens in a bowl with tomatoes, bacon, and croutons.

3. Sprinkle salad with the vinaigrette and toss to coat all ingredients evenly.
