Spring Greens Salad with Pears

Dressing
9 TBSP Extra Virgin Olive Oil
3 TBSP balsamic vinegar
1 TBSP sugar
1 TBSP minced shallots
1/2 tsp salt
1/4 tsp pepper

Salad
15 ounces Spring salad mix (purchase Dole Spring mix 3.5 oz packages or purchase fresh)
1/3 cup pine nuts
3 ripe pears
Shredded Gruyere Cheese

In small bowl combine first 6 ingredients; whisk to blend. Set aside.

To Serve: Place spring greens 6 salad plates. Sprinkle with toasted pine nuts and shredded Gruyere cheese. Arrange sliced pears, pour dressing and serve.
