Green Bean Salad with Cherry Tomatoes and Fried Shallots

This salad is the essence of summer. Bright green beans, plump cherry tomatoes and crunchy fried shallots shine in their simplicity. Use different colored tomatoes to give this salad a colorful flair.

2 lbs. blue lake green beans, cleaned and stems removed
1 lb. cherry tomatoes
1/2 lb. shallots
canola oil for frying
1/4 c. sherry vinegar
1 tsp. dijon mustard
1/2 clove garlic, minced
1/4 tsp. crushed red pepper
1/2 tsp. dried italian herbs
2 T honey
3/4 c. extra virgin olive oil
salt and pepper

Blanch green beans in plenty of salted water until crisp-tender, 1-2 minutes. Remove to ice water to shock and set color. Drain and set aside. Peel and cut shallots in half, then slice thin. Set aside about a tablespoon for vinaigrette. Heat canola oil to 350 degrees, and fry shallots in batches, taking care not to overload. Fry until golden brown, drain on paper bag and season with salt. Cut cherry tomatoes in half and set aside.

For vinaigrette: Combine vinegar, garlic, reserved shallot, crushed pepper, herbs, honey and mustard in a blender. Blend and slowly add olive oil until incorporated, adding a little cold water if it gets too thick. Season to taste with salt and pepper.

Toss beans and tomatoes with vinaigreet and a little salt and pepper to taste. Pile high on a platter and garnish with the fried shallots.

Crab Stuffed Mushrooms with Parmesan

Great Gatsby – 1920′s Classic : Crab Stuffed Mushrooms with Parmesan
Choose good sized mushrooms, about 2 inches across. When cleaning mushrooms, don’t run them under water. They are like little sponges, and will absorb it; just wipe them clean with a damp towel. The filling can be made with fresh, canned, or imitation crabmeat. If using canned, be sure to rinse it first.

Prep Time: approx. 25 minutes. Cook Time: approx. 15 minutes. Ready in: approx. 40 minutes. Makes 6 servings.

Ingredients

~ 1 lbs fresh mushrooms
~ 7 ounces crabmeat
~ 5 green onions, thinky sliced
~ 1/4 tsp. dried thyme
~ 1/4 tsp. dried oregano
~ 1/4 tsp. ground savory black pepper to taste
~ 1/4 cup grated Parmesan cheese
~ 1/3 cup mayonnaise
~ 1/4 tsp. paprika

Directions

Preheat the oven to 350 degrees F (175 degrees C).

In a medium bowl, combine crabmeat, green onions, herbs and pepper. Mix in mayonnaise and 1/4 cup Parmesan cheese until well combines. Refrigerate filling until ready for use.

Wipe the mushrooms clean with a damp towl. Remove stems. Spoon out the gills and the base of the tem, making deep cups. Discard gills and stems. Fill the mushroom caps with rounded teaspons full of filling, and place them in an ungreased shallow baking dish. Sprinkle tops with Parmesan and paprika.

Bake for 15 minutes. Remove from oven and serve immediately.

Speakeasy Bathtub Gin Drinks

The Bees Knees

Simple and Sweet Gin Cocktail

6 Tbsp Gin

1 Tsp Honey

1 Tsp Lemon Juice

Shake ingredients well with ice and strain into a cocktail glass.

Gin Smash

A Minty and Refreshing Summer Drink

1 Tbsp Superfine Sugar

4 Sprigs Fresh Mint

3 Tbsp Gin

Dissolve sugar in water and add in cocktail shaker. Muddle mint in the shaker. Add crushed ice and gin. Shake for 30 seconds. Strain into a glass, filled with ice and garnish with mint.

Singapore Sling

2 oz Gin

1/2 oz cherry Brandy

1/2 lemon juice

1 tsp powdered sugar

Seltzer water

2 cubes ice

Add lemon juice to a glass with ice. Dissolve sugar in water and add brandy and gin. Stir gently and top off with seltzer water.
