Cafe Du Monde – Cafe Au Lait

Milk


Brew the Coffee, mix 50% with warm milk and serve.

 
 

Hurricane

2 oz light rum
2 oz dark rum
2 oz passion fruit juice
1 oz orange juice
1/2 oz fresh lime juice
1 tbsp simple syrup
1 tbsp grenadine
Garnish: orange slice and cherry

Shake all the ingredients in a cocktail shaker with ice and strain into a hurricane glass. Garnish with a cherry and an orange slice.

History:
Hurricane was invented during the World War II at Pat O’Briens bar in New Orleans and was named after the shape of a hurricane lamp. Pat O’Briens bar is still open today in New Orleans’ famous French Quarter and sells their original Hurricane cocktail mix at the bar.

Maque Choux

3tbsp butter
3tbsp bacon grease
6 strips bacon, cooked and diced
2 cans corn (15oz each)
1 onion, diced
4 stalks celery, diced
1 green pepper, diced
lots of fresh thyme leaves
1 head garlic, minced
2 cans diced tomato
2 bunches green onions, finely sliced
salt, black pepper, cayenne pepper to taste

Place everything except the tomato, green onion, and seasonings into a pot.

Cook on medium heat approximately 30 minutes to soften vegetables and boil away most of the water.

Add the tomato and green onion, fold into the mix.

Season to taste.

The above made 7-1/2 servings with about 1/3 of it still leftover.

Fresh corn and tomato would be good if in season, the organic canned stuff still worked well though.
