Chilled Chai Moon Tea

10 chai tea bags
3 quarts water
Honey

Put tea bags in a putcher, add water and chill/steep overnight.

Serve over ice, sweeten to taste with honey.

 
 

Vintage Lemonade (raw version)

5 lemons
1 1/4 cups “in the raw” sugar
1 1/4 quarts water

Using a vegetable peeler, peel the yellow skins from the lemons, place them in a bowl and set the lemons aside.

Sprinkle the sugar over the skins and let them stand for about one hour, so that the sugar begins to soak up the oils from the lemons.

Draw 1 1/4 quarts of hot tap water then pour the hot water over the sugared lemon skins. Allow this mixture to cool for 20 minutes and then remove the skins.
Squeeze the lemons into another bowl. Pour the juice through a strainer into the sugar mixture. Stir well, pour into pitcher and pop it in the fridge! Serve with ice cubes.

Makes 4 servings.

Spicy Walnut Meat Tacos with Pico De Gallo, Groovy Guacamole and Macadamia Sour Cream

Spicy Walnut Taco Meat
1½ cups raw walnuts
1½ teaspoons ground cumin
¾ teaspoon ground coriander
2 teaspoons Nama Shoyu or Bragg Liquid Aminos
pinch cayenne

Soak the walnuts for an hour, then drain and grind in a food processor.
Mix all ingredients together and serve on lettuce leaves or tortillas

Pico De Gallo
1 pint cherry tomatoes, halved or quarterd – depending on size
½ small yellow onion, diced
1 cup cilantro, chopped
4 cloves garlic, minced
2 lemons, juiced
1½ teaspoons ground cumin
¾ teaspoon ground corriander
¾ teaspoon celtic sea salt
¼ teaspoon cayenne
1 tablespoon cold pressed olive oil (optional)

Mix all ingredients together and chill for at least a couple of hours before serving.

Groovy Guacamole
2 avocados, ripe
1 tomato, diced
1 lemon, juiced
¼ cup cilantro, finely chopped
1 clove garlic, minced
1 teaspoon cumin
½ teaspoon cayenne
½ teaspoon Celtic sea salt
fresh ground black pepper, to taste

Mash and mix all ingredients with a fork, and serve. You can serve this as a salad, a chunky dip, or you can mash it up smooth and add water, and use as a salad dressing.
Tip: Instead of cayenne, you could mince in some fresh hot chiles.

Macadamia Sour Creme
1 cup macadamia nuts
½ cup water
1 teaspoon olive oil
1 teaspoon golden flax seed, ground
¼ teaspoon celtic sea salt, ground
2 cloves garlic
1 tablespoon lemon juice

Blend all ingredients in blender and serve. Garnish with cilantro or chives.
