Bananas in Coconut Milk

2 & ½ cups coconut milk
¼ cup sugar
¼ tsp. salt
4 bananas (large, ripe)

Slice bananas diagonally into 1 & ½ inch pieces.
In a large saucepan, bring the coconut milk to a boil. Add the sugar and salt; reduce heat to medium and cook for 3 to 5 minutes.
Reduce heat to low, add the sliced bananas, cover and simmer for 5 minutes. (Do not stir, or the bananas will become mushy.)
Serve warm.
