2 squares (2 oz.) unsweetened chocolate (or Nestle Chocobake)
2 cups flour
1 tsp. ground cinnamon
1/4 tsp. salt
1/2 cup shortening
1/2 cup butter
1/2 cup sugar
1/2 cup packed brown sugar
1 Tbs. instant coffee crystals
1 tsp. water
1 1/2 cups chocolate chips
3 Tbs. shortening
Sift flour, cinnamon & salt
Beat shortening & butter (until creamy), and add sugars (beat until fluffy)
Dissolve instant coffee in water
Add coffee mixture, melted chocolate, and egg to the shortening, butter & sugar mixture (beat well in between mixes)
Add flour mixture
Cover & chill mixture till easy to handle (at least one hour)
After chilled shape into 2 - 7 inch rolls (use saran wrap) Chill at least 6 hours (overnight)
Cut into 1/4 inch slices, and place onto ungreased cookie sheet
Bake at 350o for 10-12 minutes. Cool.
Melt chocolate chips & shortening.
Dip 1/2 of cookie into chocolate mixture and set on wax paper until set.
