1 cup butter (room temp)
1 ½ cups sugar
2 large eggs
1 tsp. vanilla
2 cups grated zucchini
2 ¾ cups flour
1 tsp. baking powder
1 tsp. salt
1 cup chopped walnuts
1 cup coconut
½ cup raisins
1 can vanilla frosting (optional)

Cream butter and sugar until light and fluffy.
Beat in eggs and vanilla.
Stir in zucchini.
Stir in mixture of flour, baking powder and salt.
Stir in nuts, raisins and coconut.
Bake at 350 degrees on a greased cookie sheet 12-15 minutes until done. (Note, cookies don’t brown much, just around the edges and underneath.)
Ice with can of vanilla frosting, if desired.
