John’s Holiday Potatoes

8 large unpeeled baking potatoes (scrubbed)
½ cup butter
2 Tbsp. grated onion
2 tsp. salt
1 tsp. dried thyme
¼ tsp. pepper
2 cups (8 oz.) shredded sharp cheddar cheese
2 Tbsp. chopped fresh parsley

Thinly slice potatoes and place in a greased shallow 4 quart baking dish. Heat butter, onion, salt, thyme and pepper until butter is melted. Drizzle over potatoes.
Cover and bake at 425o for 45 minutes, or until tender. Sprinkle with cheese and parsley. Bake uncovered for 15 minutes longer or until cheese melts.
Makes 12-16 servings.
